
Butter Lettuce Beef & Sausage Ginger Wraps

This is my twist on Gordon Ramsay's Beef Wraps from his cookbook Home Cooking
Ingredients:
½ pound ground beef
½ pound ground sausage
4 garlic cloves, finely chopped
4 inch ginger root, peeled & finely chopped
1 jalapeño, deseeded & chopped
1 tbsp light brown sugar
1/2 tbsp sesame oil
Zest & juice of 1 lime,
3 spring onions, trimmed and chopped
salt and pepper

For the Sauce:
1 tbsp soy sauce
Juice of 1 lime
1 tsp sesame oil
¼ - ½ teaspoon red chilli flakes
¼ cup chopped cilantro leaves
1 tsp light brown sugar
1 tbsp oil
Cooking instructions:
Over medium heat, cook the beef and pork together, breaking it up as it cooks. Season with salt and pepper. When it is close to being fully cooked, add the sesame oil, garlic, ginger, sugar, and jalapeño pepper. Stir in the lime zest and juice, then add the spring onions, stirring for 30 seconds. Turn off the heat.
Mix all the dressing ingredients together and adjust to taste.
To serve, spoon some of the mixture into the lettuce leaves, drizzle with a little dressing and serve.
