Butternut Squash Soup with Crispy Croutons & Fried Sage

Butternut Squash Soup 🍲
Perfect for chilly days!
Ingredients:
- 1 medium butternut squash, peeled & cubed 🥄
- 1 onion, chopped 🧅
- 2 garlic cloves, minced 🧄
- 1 tbsp olive oil 🌿
- 4 cups vegetable broth 🍶
- 1/2 cup coconut milk or cream (optional) 🥥
- 1 tsp cumin 🌟
- 1/2 tsp cinnamon 🍂
- Salt & pepper, to taste 🧂
- Red Pepper flakes
Instructions:
- Sauté: Heat olive oil in a pot, cook onion for 5 mins, add garlic for 1 min.
- Boil: Add cubed squash, pour in broth. Simmer for 15-20 mins until tender. 🍲
- Season: Stir in cumin, cinnamon, salt, and pepper.
- Blend: Puree with an immersion blender (or in batches in a regular blender).
- Finish: Add coconut milk or cream for extra richness! 🥥
