
Cauliflower Potato Hash

A hearty and flavorful breakfast hash packed with crispy cauliflower, tender potatoes, and spicy ground chicken sausage, topped with melted pepper jack cheese and eggs.
* This can be a vegetarian meal by omitting the chicken sausage.

Ingredients:
2 tablespoons olive oil
4 cups cauliflower florets
½ white onion, chopped
2 medium potatoes, peeled and cubed
1 pound ground chicken sausage
4 eggs
1 cup pepper jack cheese, shredded
Fresh parsley, for garnish
Salt and pepper, to taste
Instructions:
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground chicken sausage, breaking it apart with a spoon. Cook until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil.Add the chopped onion, cubed potatoes, and cauliflower florets. Season with salt and pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and tender.
Return the cooked sausage to the skillet, stirring to combine with the vegetables. Use a spoon to create four small wells in the hash. Crack an egg into each well. Cover the skillet with a lid and cook for 3-5 minutes, until the egg whites are set but yolks are still runny (or to your desired doneness).
Sprinkle shredded pepper jack cheese over the hash. Cover for another minute until the cheese melts.
Remove from heat and garnish with fresh parsley.
Serve hot and enjoy!
