Herbed Celery Lentil Salad with Lemon-Orange Dijon Dressing

Ingredients:

For the salad:

  • 1 whole head of celery (including leaves), chopped
  • 2 cups cooked lentils (green or brown, rinsed and drained)
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped

For the dressing:

  • 4 tbsp Dijon mustard
  • 4 tbsp fresh lemon juice & lemon zest
  • 4 tbsp orange juice & orange zesΒ 
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Salad:

    • Chop the entire head of celery (including the stalks and leaves) into bite-sized pieces. Add to a large mixing bowl.
    • Add the 2 cups of cooked lentils, chopped parsley, cilantro, and mint.
  2. Make the Dressing:

    • In a small bowl, whisk together the Dijon mustard, lemon juice, orange juice, and olive oil. Season with salt and pepper to taste.
  3. Toss Everything Together:

    • Pour the dressing over the salad and toss gently to combine. Make sure everything is well-coated with the dressing.
  4. Serve:

    • Serve immediately for a fresh, crunchy salad, or refrigerate for 30 minutes to let the flavors meld together.
