Herbed Celery Lentil Salad with Lemon-Orange Dijon Dressing

Ingredients:
For the salad:
- 1 whole head of celery (including leaves), chopped
- 2 cups cooked lentils (green or brown, rinsed and drained)
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
For the dressing:
- 4 tbsp Dijon mustard
- 4 tbsp fresh lemon juice & lemon zest
- 4 tbsp orange juice & orange zesΒ
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions:

Prepare the Salad:
- Chop the entire head of celery (including the stalks and leaves) into bite-sized pieces. Add to a large mixing bowl.
- Add the 2 cups of cooked lentils, chopped parsley, cilantro, and mint.

Make the Dressing:
- In a small bowl, whisk together the Dijon mustard, lemon juice, orange juice, and olive oil. Season with salt and pepper to taste.

Toss Everything Together:
- Pour the dressing over the salad and toss gently to combine. Make sure everything is well-coated with the dressing.

Serve:
- Serve immediately for a fresh, crunchy salad, or refrigerate for 30 minutes to let the flavors meld together.
