Spicy Sausage Rice based on Gordon Ramsay's Recipe

This Recipe is based on Gordon Ramsay's recipe from his cookbook Home Cooking (https://amzn.to/4hvKPtP); I tweaked a few ingredients based on what garden goodies I had on hand. 

Ingredients:

1 tablespoon mild olive oil 
1 onion, finely chopped
1 red bell pepper chopped
2 garlic cloves, finely sliced
8 ounces ground spicy sausage
1 teaspoon smoked paprika 
1 cup, uncooked long-grain rice 
½ cup dry white wine
2 cups chicken broth
4 spring onions (green part), trimmed and sliced or garlic chives, chopped
2 tomatoes, roughly chopped or one 8 ounce can, drained canned tomatoes*
small bunch of flat-leaf parsley, roughly chopped

*I used my garden canned tomatoes since it was winter time.

Instructions:

Add just 1 tablespoon of olive oil to a heavy-based casserole dish and cook the onion for 5 minutes until soft.

Add the pepper and garlic and cook for 2 minutes. 

Turn the heat to high, crumble in the sausage, and cook for about 4-5 minutes until browned.

Add the smoked paprika and the rice and stir well to mix thoroughly and absorb the flavors.

Now deglaze the pan by pouring in the white wine and scraping any bits stuck to the bottom.

Add the stock and bring to a boil and then turn to a simmer, but don't put a lid on.

Cook gently for 15-20 minutes until the rice is tender and the liquid almost entirely absorbed. 

When the rice is soft, have a taste and adjust the seasoning. 

Gently fold in the spring onions, tomato and parsley and serve right away.
