Herbed Tomato, Cucumber, Olive Orzo Salad with Feta Cheese

Ingredients:

2 cups cooked Orzo

1/3 cup Oil (add more if needed)

1/4 tablespoons Balsamic Vinegar

Salt and Pepper to taste

1/2 cup slice Kalamata Olives

1 cup diced Tomatoes

1 cup diced Cucumbers

1/2 cup chopped fresh basil

1/4 cup chopped oregano

Directions:

Cook Orzo in salted water; drain and cool

Prepare your Fresh Ingredients

Mix all the ingredients in a large boil; season to taste with Salt & Pepper

You can serve it room temperature; however, the longer it sits in the refrigerator, the better it tastes!

* I use this mixture to make stuffed tomatoes also.
